Happy Super Bowl Sunday!!! While I do like the football and have always watched the Super Bowl, I don’t follow real close or even have a favorite team anymore. But the man has gotten me watching it more this year than I have in recent years. He is a Bronco’s fan so we have to watch and cheer them on! And let’s be honest….I am really looking forward to wings and party food today! But aren’t we all, really??!! LOL.
Life is back to normal for the most part after the craziness of a couple of weeks ago….there is still the everyday stress and to-do’s but that is just part of life we all work with.
Sunday – stuffed jalapeños, wings, cut up veggies, dips to go with them
Monday – Roasted chicken, beets, mashed cauliflower
Tuesday – Festive pork roast, steamed broccoli, wild rice
Wednesday – Salmon patties and a salad
Thursday – leftovers
Friday – Shepard’s Pie from Well Fed (with a few changes)
Saturday – TBD
Lunches this week will be a combination of left overs and whatever extra protein I find appealing at the store today with a salad or cole slaw. Tuesday’s pork roast recipes comes from the Better Homes and Garden cookbook but I will have to adjust a few things to make it Paleo friendly. I will share that with you once I get it all nailed down.
