Hello! I am a day late getting my weekly menu out to you for a couple reasons. Although yesterday I did create the menu and go to the grocery store, I was not in the mood to write and just feeling a bit off(for lack of a better explanation). Also, my sister ask me to go for a walk so how could I say no! 🙂
I had a pretty active weekend! It was 70+ degrees here on Saturday so my man and I went for a bike ride. We went a little over 5 miles, 5 very hilly miles! Hills are pretty hard to get away from here in central Missouri. We rode to and on the trail that I discovered last summer that spurs off the local greenway. It was a fun ride even with all the hills, LOL! My sister and I ended up walking basically the path yesterday. It was great to spend time with her because we have not in far too long!!
Last night for supper my guy grilled pork ribs! Oh so good!! It is one of my favorite things that he grills. Along with those, I sautéed some red cabbage and roasted butternut squash. I kept both items pretty simple in flavors so the ribs stood out. The cabbage was just seasoned with apple cider vinegar, salt, pepper and fresh thyme and at the end of cooking, I added a little coconut aminos. And for the squash, I covered in ghee and seasoned with salt, pepper and sage. For dessert, I halved two apple, seasoned with cinnamon and allspice and baked at 350 for 20 minutes or so. Near the end of baking I topped with a few almonds and a little bit of brown sugars. All in all, it was a darn good meal.
I did not end up cooking the thighs with tomato and olive sauce last week because I made spaghetti the night before and I realized that having a tomato based meal to days in a row would not be the best idea since the man and I both seem to have a bit of digestive trouble after having to much tomato.

Monday – Steak Tips with mushroom gravy, white rice, asparagus
Tuesday – Roast Pork Loin, spinach salad, roasted sweet potatoes
Wednesday – Chicken Thighs with tomato & olive sauce, steamed broccoli
Thursday – leftovers
Friday – Meatloaf, smash cauliflower, roasted carrots
I am going to try out Bob’s Red Mill gluten free 1 to 1 flour to make the gravy to go with the steak tips. The Paleo/Primal lifestyle does not include anything containing wheat so I have not used regular flour in many years. I have been using either arrowroot or tapioca flour to thicken sauce in the last year or so and I like them but it is sometimes difficult to get the correct ratio. So after seeing this being used by some other Paleo/Primal people, I have decided to give it a go and see how it work for me….both in the cooking and in my digestive system. I will let you know what I think later.
The rest of the menu is pretty basic again this week. I have quit the busy week so I did not want to get to fancy but was as always, I want good food!! Lol!
