Weekly Eats 1/29

Hello lovelies!  I hope that you are having a fantastic weekend!  After a busy week and not having much time together, the man and I have been chilling this weekend.  Friday night we went out to eat at one of our favorite restaurants, then came home and played a few games.  Yesterday we just piddled around the house, I did some reading and got a nap in!  Today we both need to get a few things done so that’s what we are working on this morning.

I sat down Thursday night and began working on a meal plan for this week and went to the grocery store.  So today, I just had to decide what we would eat each day and make sure I have all ingredients…my trip to store was sort of a struggle, I forgot things on the list and they were out of other item, lol!

Sunday –  Ribs, butternut squash, spinach salad
Monday – lamb chops, roasted broccoli and carrots, rice
Tuesday – lemon caper chicken & zoodles
Wednesday – beef stew
Thursday – creamy sausage & kale soup
Friday – Shepard’s pie
Saturday –  wings, veggies to be determined

Trying just one new recipe this week, The Sausage and Kale soup.  This recipe is from the Dec/Jan issue of Paleo Magazine.  Ingredients include Italian sausage, onion, carrots, coconut milk and kale, to name a few.  I will let you know what I think and share later on.

The rest of the menu includes things we eat fairly often in our whole food and Paleo-friendly lifestyle…though it has been too long since we have had ribs, I am really looking forward to those!!!  And I always enjoy the lemon caper chicken, it is a nice bright lemon butter sauce and very satisfying.  I am also going to roast a pork shoulder for lunches this week.
