Frittata

Hello!  I have a recipe for you!

I do not watch much TV these days.  As a results I have a very limited channel selection!  I watch a fair amount of PBS Create when the television is on.  If you are not familiar with the lineup on this channel, they have food, crafty, travel and home improvement shows….so it’s like HGTV, Travel Channel and the Food Network rolled into one!

A few weeks back I was watching one of the cooking shows and the lady made a frittata with asparagus and leeks.  It looked delicious!  And it got stuck in my head…big time!  I bought the ingredients the next shopping trip but ended up having to use the asparagus for another meal so thought I would just wait until the following week to give it a try but I couldn’t wait!  I lasted about 3 days and then I was off to store so I could make this frittata for supper that night.  Now, I did not remember the show I saw this on so I had no recipe to follow but egg casseroles are not too hard so I just went with what I remember from the show and knowledge from past cooking.  It turned out fantastic!!

Leek and Asparagus Frittata

10 eggs
3/4 cup grated hard cheese such as parmesan or pecorino romano
3 tbsp. coconut milk
1 leek
3 cups asparagus
1 glove garlic, minced
salt and pepper to taste
1 cup diced ham

Preheat oven to 350 and reserve 2 tablespoons of cheese for topping.

Heat cast iron pan.  Slices leeks and dice asparagus. Sauté in skillet until they become tender crisp.  Add in garlic and ham, cook another minute.  Set aside to cool slightly. 

While mixture is cooling whisk together eggs, cheese, coconut milk, salt and pepper.  Once veggie mixture has cooled, add to eggs and mix.  Return mixture to pan and bake for 15-18 minutes, until eggs are set.  Top with remaining 2 tbsp. of cheese and broil on high for 1-2 minutes until cheese has melted.

I also made this with sausage instead of ham and it was still good…though I like the ham version much more. I think that replacing the asparagus with broccoli would be just as tasty. Oh andp1070775 mushrooms! Mushrooms would be awesome too…I think I will sub those for the ham or sausage next time. The possibilities are endless, LOL!
