Weekly Menu

Happy unofficial start to summer!! Personally, we are taking it easy this weekend and just hanging out at home. I am currently working on some coaching/blog/menu planning items while my guys are snuggled up on the couch napping. It is so sweet! But it took a bit for that to happen, Anghus fought it for a good 20minutes before giving in. The kid just wants to do everything but nap these days.

Here is what I have planned for our dinners this week.

Nate make some damn good ribs so any time we have enough time for him to make them, I put them on the menu!! Beets have been available to me locale farmer’s market so looking forward to having those. Everything just seems much more flavorful when getting it straight from the garden! I will also be prepping some beets to work into Anghus’s meals.

For the stir fry, I will be using a combination of leftover sauces that I have in the frig. I have some Sunshine Sauce from the Well Fed cookbook and the sauce that goes with the Super Garlic Meatballs from the 21 Day Sugar Detox Daily Guide. I mixed the two for lunch one day and oh my, was it good!

Scotch Eggs are always a hit when I work them in for the week. But it is hard not to love them, they are a hard boiled egg wrapped in sausage and baked! I use this recipe from the Well Fed. Although it seems like it would take a long time, it comes together rather quickly because I always have cooked eggs on hand.

The rest of the menu is a few of the easy meals that I rely on when I know I need healthy food the comes together quickly.
