Weekly eats for 1/8

Well one week of 2017 is behind us!  It was a cold one!  Most morning it was in the single digits and barely got to 20 here in Missouri and we had a little bit of snow.  Looks like it will be a warmer next week though, that is nice.

Cooked the chicken strips and carrot slaw last night with mixed reviews.  The flavor of the strips was good but the recipe cook time was too long for our taste, they were dry.  Actually, we are not big fans of chicken breast so that is the real problem….we like our thighs!!  So I will make them again but use thighs instead and reduce the cooking time.  In my opinions thighs have better flavor and do not tend to dry out because of the extra fat.  The carrot slaw was good, but I will tweak that some the next time around also.  The dressing was olive oil, honey and lemon juice, just would have preferred more of it and a tad more lemon.  The meal was a nice change of pace and gives me a good starting point for next time.

The guy and I went out to eat at one of our favorite places last Tuesday so I have one less recipe to pick for this week, which I am not complaining about!  Lol!  Here is what is on tap for the week ahead.

Sunday – Chipotle Barbacoa Tacos from Against All Grains
Monday – T-bone steak and roasted veggie medley
Tuesday – Pork tenderloin, braised cabbage and fried apples
Wednesday – meatloaf, Cauli-mash and steamed carrots
Thursday – Beef and vegetable soup
Friday – Chicken Thigh with olive and tomato sauce, rice & roast broccoli

I am pretty darn obsessed with the roasted viggie medley right now.  It is a combination of Brussel sprouts, beets and sweet potatoes.  I picked up the idea from Paleo magazine, they didn’t include much seasoning so I have adapted to fit our tastes.  I will share that with you soon.

The chicken thigh recipe is new.  I think I found it in Cooking Light years ago but have never made it.  It is a slow cooker recipe but I am going to give it a try in the Instant Pot.  I am still learning the ins and outs of the Instant Pot(IP) so we will see how it turns out.  I don’t doubt that the flavors will be bad, I am more concerned with executing it for the IP.  I will let you know how that turns out!

The rest of the items are things I cook fairly regularly…or in the case of the steaks, my guy cooks.  He makes a mean steak!
