Today is my last day of vacation…not totally happy about that!! The time off was derailed by sickness, both my guy and his kids ended up being sick most of last week so we did not get to have as much fun as we wanted too. We did play games, got in a few short bike rides with the kids and went to watch Rogue One. The man and I fit in a longer bike ride yesterday and some with my family yesterday.
So today I am working on getting prepped and ready for going back to reality tomorrow. I have done laundry, meal planned and shopped. I have not been great with meal planning lately but I have a pretty tasty menu planned for this week, if I do say so myself! 😉 I have felt like our meal have been in a rut lately so I actually pulled out the cookbooks and magazines to find some new recipes and old favorites. I have felt like my cooking has been in a rut lately
Monday – Cabernet-Braised beef short rids, smashed cauliflower and roasted asparagus
Tuesday – Baked Marinated chicken thighs, rice, roasted broccoli, peppers and carrots
Wednesday – Chipotle Barbacoa Tacos from Against All Grains and all the fixings You can find the recipes here.
Thursday – Beef Goulash, salad
Friday – Baked chicken Strips, Carrot slaw and potatoes
Saturday – Pork Tenderloin, roasted veggie melody(brussels, beets, sweet potatoes)
I found a few things from Paleo Magazine. The chicken thighs are from the Aug/Sept 2016 issue. We have had this before and they are pretty good, a nice change of pace from my usually baked thighs. the chicken strips and carrot slaw are from the Oct/Nov 2016 issue. This we have not had before. The strips are pretty basic, just seasoned with poultry seasoning and baked. The carrot slaw should be good, it has cranberries, almond and lemon as a few of the ingredients. I will let you know what I thinks later this week.
So there it is for this week. A little fancy, a little basic and all good!
