Weekly Eats 2/5/17

Happy weekend to you!  I hope your week was great.  Mine was not too bad if you take out work being very busy, but honestly, that is normal.

Getting a head start on meal planning and working on it today instead of tomorrow since I need to get to the store today to pick up wings to have to supper tonight…hopefully there will be some left since the Super Bowl is tomorrow.  And I would like to have a nice relaxing day tomorrow and just do whatever strikes us.

Here is what is on tap for the upcoming week –
Sunday – Primal Nachos
Monday – Sausage, Sauerkraut, roast potatoes
Tuesday – Hamburger, herb buttered spaghetti squash, steamed carrots
Wednesday – Left overs
Thursday – Spaghetti with kelp noodles, salad
Friday – Chicken Thighs with Olive & tomato sauce, rice, roast broccoli

We have not had nachos in a while and I am very much looking forward to those!  I add in a bit a liver to the ground beef for the nutritional value.  Liver is full of many vitamin and minerals, such as A, D, Folic acid, iron and copper.  You can find more information here https://chriskresser.com/natures-most-potent-superfood/.  I like to add liver in with ground beef recipes because it is a little easier to hide it ….I know it is good for me but I am not a huge fan of the taste….and take in all the good nutrients. Meatloaf is another recipe that includes liver.

I am also looking forward to the chicken thighs.  I really enjoyed that recipes last time I made it and it is a great addition to our Paleo recipe list.  I plan on sharing that one with you soon. I will make it in the Instant Pot again.
