Greeting! I have been MIA lately, not because I want to be but because life and work has been crazy busy lately. And with that come exhaustion! And lack of productivity for anything personal other than cooking, laundry and household chores. Even meal planning has been put on the back burner. I have mainly just been going to the store and picking up appealing items…..completely winging it!
The last few weeks there has been at least one batch cooking night so that the man and I have lunches to get us through the week. I have been actively trying to get some variety in our lunch time veggies…..the poor guy was stuck eating cole slaw most days of the week and I would just throw in whatever veggie was appealing to me in the morning, sometimes that ended up as a piece of fruit. This action lead to a new obsession with a roasted veggies!! I had never tried roasting broccoli or cauliflower at home but man, are they delicious!! And so easy! I have been doing a tray full of each and carrots then tossing them together and enjoying! I keep them pretty simple by coating them with coconut oil, seasoning with salt, pepper and garlic powder and roasting at 375 until they are done. We are both very satisfied them.
I finally sat down tonight and made a menu for the next week.
Saturday – spaghetti and a salad
Sunday – Steak, sweet potatoes, and cole slaw
Monday – Chicken Marbella(Paleo Cooking from Elana’s Pantry) and wild rice
Tuesday – Czech Meatballs(Well Fed) and sautéed cabbage
Wednesday – Taco skillet and caulirice
Thursday – leftovers
Lunch – baked thighs, leftover protein, roast veggies, sautéed cabbage, and tuna salad
Picked up everything I needed at the store tonight except for steaks because they didn’t look very good so I will go and try to find some again in the next few days…hopefully I have time and better luck! I plan to prep for the Chicken Marbella on Sunday. I will also mix up the meatballs up over my lunch break on Tuesday so they are ready to go the night.
